Gluten-Free Diet: GF Recipes: Mary's Favorite Pastry
Ingredients
2 Tablespoons potato flour
7/8 cup white rice flour, Ener-G Foods®*
1/4 teaspoon salt
1/4 teaspoon sugar
1/3 cup Crisco® solid shortening
Directions
Mix dry ingredients. Cut in the shortening until pieces are pea size. Chill, bowl and all, in freezer for a few minutes.
Sprinkle in 2-5 Tablespooons ice water and fluff with a fork. Adequate water has been added when a small amount of pastry holds together when squeezed.
Grease 8 1/2 inch pan. Roll out pastry to size or press into pan. Use oven temperature appropriate for pie filling.
*EnerG Foods® Rice flour is a must for this recipe; oriental style rice flour is too fine, and will require additional shortening.
