Gluten-Free Diet: GF Recipes: Basic Bread Dressing and Variations
Ingredients
4 cups gluten-free bread, cut into 1/2 inch cubes
1/4 cup fresh, chopped parsley
1 teaspoon sage or thyme, dried
3/4 teaspoon salt
1/4 cup butter
1/4 - 1/2 cup chopped onion
3/4 -1 cup chopped celery
Milk or stock to moisten the dressing very slightly
Directions
There is no set rule for the proportions of ingredients in bread dressing. It should be palatable, light and slightly moist and well flavored. Chopped green peppers, nutmeats, sautéed mushrooms and drained or slightly sautéed oysters may be added to it. Stock may be substituted for milk.
Measure the cubed gluten-free bread into a medium mixing bowl, add the herbs and salt and toss lightly. Melt butter in a skillet. Sauté onions, chopped giblets and celery for 3-5 minutes. Add the sautéed mixture to the rest of the ingredients. Mix well. Add milk or stock to moisten the dressing very lightly. Bake in a greased casserole at 350 degrees until browned and reaches an internal temperature of 160 degrees or more.
Variations
There are many different variations for stuffing made with regular bread or cornbread. Herbs can be added to vary the taste. Other ingredients can be added, or substituted for the recipe ingredients. Here are some delicious possibilities:
1 - 2 teaspoons ground rosemary
1 - 2 teaspoons poultry seasoning
1 - 2 teaspoons rubbed sage
1 cup browned, drained sausage
1 cup chopped apples
1cup chopped celery
1 cup chopped onions
1 cup chopped green onions
1 cup chopped, cooked chicken meat
4 ounces sliced mushrooms
1 cup chestnuts, roasted and chopped
1/2 cup raisins
1 cup cooked giblets, chopped
GF vegetable broth
GF chicken broth
GF turkey broth
1 cup chopped nuts (pecans, walnuts, pine nuts, or slivered almonds)
